Arugula Pesto Grilled Cheese Sandwich

Use up all those amazing spicy greens!

Arugula Pesto Grilled Cheese Sandwich

For the pesto:

2 cups arugula 
1 clove garlic 
1/2 - 2/3 cup @queencreekolivemillolive oil
1/4 cup walnuts 
1/4 cup Parmesan cheese 
@seesalttaste Sea Salt to taste 
Start with some arugula and olive oil in high speed blender. Start it blending then add in more arugula, and oil. Slowly add other ingredients adding the olive oil slowly to keep the mixture blending smoothly. Taste for saltiness and add more or less as needed. 

To make the sandwich:

You can use a hot oiled pan to sauté and blister baby tomatoes, or roast tomatoes drizzled in olive oil in the oven for a few minutes on high heat. On one side of our favorite Proof bread sourdough slice. Add a layer of your favorite cheese - provolone, mozzarella, or any Italian blend would be wonderful.
Add a layer of your toasty tomatoes, some salt and pepper and top with another slice of bread.
Place the sandwich in a hot pan with some butter melted to create a nice crust on the outside.
Heat sandwich on one side for a few minutes until brown. Flip and cook the other side for 2-3 minutes until browned.
